Global supply chains involve a lot of costly middlemen and fossil fuels. Whereas the products at the supermarket may have traveled across the ocean or from the other side of the continent, food hubs, which function more regionally, eliminate the steps between a farmer’s field and consumer’s fridge, creating more local jobs, keeping dollars flowing locally, and providing fresher, higher quality food to consumers.
